Whew what a week it's been! I came back from glamping with a few girl friends in Banff and we had a blast! If you haven't heard of Otentik before you should definitely check it out. You stay in this five person cabin that has mattresses for you to have beneath your sleeping bag, complete with a table and electrical outlets (at least the Banff location does). It also has a propane stove top outside with a outdoor picnic table and fire pit. It was so much fun! We went hiking, cooked hot dogs and smores- and went to sleep with the rain pattering against the roof

Anyway we brought tons of hot dogs, marshmallows for smores, and had an absolute feast! However we were left with a ton of marshmallows- so when we got back the only reasonable option to use them up before they go stale? Rice Krispies squares! An all time favourite. This is a recipe I have adapted several time to get jut the right combination of gooey marshmallow to crispy cereal. So good!!

All you need is a 8x8 pan lined with parchment to make a sort of handle to lift it out (my pan is a bit short but one with higher sides would be good)

Then in a pot melt the butter, and add the marshmallow and salt and stir constantly to melt the marshmallows.

Once it's fully melted add the vanilla and rice krispies. Stir and pour into you pan, pressing it into a even layer.

Once it's fully cooled, remove from pan and cut into squares! Delicious!

I made a smaller batch, but feel free to double it if you have a higher sided pan or finish the first batch in 10 minutes :)


RICE KRISPIES

Prep time: 15-20 min (including cool down time)

Makes: one 8x8 pan (~10-12 squares)

Ingredients:

1/2 C butter

10 oz fresh marshmallows (NOT stale)

1 tsp salt

1 tsp vanilla

6 C rice krispies

Line your pan with two folded over pieces of parchment to make strips, place them so that they cross one another like a plus sign. This will make it easier to remove the rice krisipes.

Melt butter in a large saucepan, then add salt and marshmellows. Stir constantly until the marshmellows have completely melted, remove from heat and add vanilla. Then add rice krispies and stir until combined.

Pour the rice krispies into your lined pan, and with a spatula push it down to make a compact and even layer, spreading to all corners of the pan. Let cool until at room temperature- remove from the pan and cut into squares. Then dig in!
