Chocolate Chip Cookies

Boy has it been HOT here. Like too warm- even for me. We have been averaging roughly ~28-30 C here and it is boiling. Not that you could tell at my worksite, why are hospitals always cold???

I normally like to cycle after work and today I was just drenched in sweat and had to turn around, which sucks but I would much rather that than heat stroke.

Anyway we have had some rain, with a few days of just outright downpour. Thankfully my small garden was still alright! I have beans, beets, carrots, lettuce and green onion! The beans are already to harvest, and let me tell you, nothing beats a good bunch of beans fresh from the garden.

Anyway, going back to the days with a downpour, I had a hankering for something warm, chocolatey and gooey- que the chocolate chip cookies! These are a classic, a recipe passed down from my grandmother. I remember sitting by her pool in the summer eating a batch of these with a glass of cold milk. Absolute heaven.

They take maybe 20 minutes to make. Super quick. 

First you start with creaming of the butter and sugar for a few good minutes, add in your egg and vanilla, and then the sifted dry ingredients. Finally fold in those yummy chocolate chips and bake!

They are best served warm from the oven with a glass of milk. Feel free to share with others, but you might not want to- they are that good.

Chocolate Chip Cookies

Total prep time: 15 minutes

Bake time: 12-15 minutes

Makes: 24 cookies

Ingredients

1 C + 2 tbsp all purpose flour

1/2 tsp baking soda

1/2 tsp salt

1/4 C white sugar

1/2 C brown sugar

1/2 C butter

1 egg

1 tsp vanilla

1 C semisweet chocolate chips

 

Instructions:

 Sift flour, salt and baking soda in a separate bowl and set aside. Preheat your oven to 350.

In a mixmaster combine butter and both sugars. Let it beat for 3-5 minutes, you want it pale and fluffy. Add in the egg and vanilla and beat until combined and well incorporated. Next fold in your flour mixture by hand (using the beaters deflates the cookies and makes them spread out more). You don't want any streaks of flour, it may take a bit of mixing to form the dough. Finally fold in the chocolate chips.
