The weather was gorgeous this weekend!  We all sat down on the patio this evening and had dinner (with Kona begging for leftovers)! I love this pork tenderloin recipe. It has hoisin sauce, ginger, garlic and soy sauce which come together to make a yummy marinade. Serve it with baby potatoes and a side salad and you have a low maintenance and delicious dinner.

It's really great in that you marinate the meat either overnight or first thing in the morning a just leave it until an hour before you plan on serving dinner. This was especially helpful this evening as a bunch of my friends and I went and did an escape room. I honestly love them, it's a great way to mentally challenge yourself and work together as a team. This one we did (I won't spoil it) had two parts to it. Part A they give you 60 minutes to solve, and part B they give you 10 minutes, regardless of if you finish part A early. I am very happy to say that we solved it in time- but part B was definitely tight. It may or may not have involved diffusing a fake bomb. 

Anyway! Back to the recipe!

It all starts with the marinade. Simply mix all the ingredients, reserve about 3 tbsp and pour the rest into a bag, or if you have a marinator I would highly recommend using that. Add the pork tenderloin (ensure that it is fully covered), and let sit in the fridge overnight or at least 8 hours.

 Remove the pork tenderloin from your marinade and sear either side on high heat on the barbecue, followed by moving it to a side of the barbeque that you can reduce the heat to low. What I normally do is have one side of the barbeque with the heat on high, and the other with the heat on low. Turn every 5-10 minutes. If your pork tenderloin is on the thicker side like mine, it will take approximately 20-25 minutes total. Once it's fully cooked, and internal temperature reaches 145F, baste on the rest of your marinade, let cook an additional 2-3 minutes just to make sure the rest of the marinade sticks to the pork and remove. Let rest for 10 minutes before serving and then dinner is ready!

Hoisin Pork Tenderloin

Prep time: 10 minutes

Cook time: 30-35 minutes

Serves: 4-5 people (depending on the size of your pork tenderloin)

 

Ingredients

·      1/3 C hoisin sauce,

·      1/3 C molasses

·      1 tsp minced fresh ginger

·      1 tsp soy sauce

·      1 tsp water

·      1 large crushed clove of garlic

·      1 large pork tenderloin

 Combine hoisin sauce, molasses, ginger, soy sauce, water and crushed garlic in a large measuring cup. Reserve 3 tbsp of marinade off to the side for later.

Pour your marinade into a large bag or marinator and add your pork tenderloin, making sure it is fully covered with the sauce. Let sit in the fridge overnight or at least 8 hours.

Heat your barbeque to 350-400F. If possible turn two burners to high heat and the others to low. Remove the pork tenderloin from the marinade and grill on the high heat for 3-4 minutes on both sides. Then move the pork tenderloin to the side with burners that are on low. Grill for an additional 20-25 minutes, flipping every 5 minutes. Once the pork tenderloin reaches 145F baste with the remaining marinade and cook an additional 2-3 minutes. This is just to get the marinade to stick to the pork tenderloin. Remove from the heat and let sit 10 minutes before serving.
