Easy Granola

Hi! Super excited that this is my first-ever blog post. Let me introduce myself, my name is Tia. I am a healthcare worker that loves to cook in my spare time with my cat Kona! Contrary to the title- I don't like coffee very much. The caffeine upsets my stomach, but I am a total tea addict. Kona and tea doesn't sound as good though, doesn't it? 

Anyway, Kona is a pseudo-helper in the kitchen- she constantly eats up the crumbs and begs for food. Absolutely begs- seriously she must be a dog disguised as a cat.

This recipe is one of my go-to favorites for quick and easy breakfasts in the morning. I make this recipe weekly as I am a huge yogurt person, and absolutely love the crunch of pecans and granola with it. Sooo good.

First you start with the oats, chopped pecans (or if you are lazy like me just break them up into small pieces with my hands) and spices.

Next add in the honey and oil, mix until all of the oats and nuts are coated. If you are using natural honey that may be a bit thick or crystallized (like me), just heat it up in the microwave until it is runny.

Pour into a 8x8 greased baking dish, press down with a spatula until it forms an even layer- and bake! Super quick and super delicious.

Put it on top of yogurt and berries and you have breakfast! Mangoes are in season right now, and honestly are delicious with some plain yogurt and the granola. Sweet, slightly tangy and crunchy- always a winning combo.
